Welcome to Custom* Food Lab! Formerly Custom Folkestone, we have now moved from our venue on the Harbour Arm in Folkestone to work more freely, creatively and more closely with nature.
Our core ethos of taking responsibility for our food choices through hyperlocal sourcing, community growing and knowledge exchange will guide us as we create site-specific food events across the south of England. We are based on the Kent coast in Folkestone and on the Wiltshire/Dorset border in Tisbury.

Scallop wontons make an appearance in a sonorous chilli/ginger broth – chillies with plenty of kick, from their own plant – while 'Crabaroni' cheese featured this week, crabs freshly steamed from Folkestone Trawlers and combined with Ottinge Court Farm cheese, their version of the Swiss cheese Mutschli.
